Pink Frosted Sugar Cookie Copycat

Copycat Swig pink frosted sugar cookie

Swig’s menu lists a soft Sugar Cookie topped with pink buttermilk frosting. This fan version uses sour cream in the frosting instead.

Prep: 15 mins Bake: 12 mins Yield: 12 Cookies

Ingredients

  • 1 cup Butter (softened)
  • 3/4 cup Vegetable Oil
  • 1 1/4 cups Granulated Sugar
  • 3/4 cup Powdered Sugar
  • 2 large Eggs
  • 5 1/2 cups All Purpose Flour
  • 1/2 tsp Baking Soda & Cream of Tartar
  • Pink Frosting: Butter, Sour Cream, Powdered Sugar, Pink Food Coloring.

Instructions

  1. Preheat your oven to 350 degrees. In a large bowl, cream together the softened butter, vegetable oil, granulated sugar, powdered sugar, and a pinch of salt until smooth.
  2. Add the eggs one at a time, mixing well after each addition. Gently stir in a splash of vanilla extract.
  3. Slowly fold in the all purpose flour, baking soda, and cream of tartar. Do not overmix. The dough should be soft but not sticky.
  4. Roll the dough into golf ball sized rounds and place them on a baking sheet. Use the bottom of a glass dipped in sugar to press them down slightly so they have a slightly rough edge.
  5. Bake for 10 to 12 minutes. Let them cool completely before spreading a thick layer of the pink sour cream frosting on top. Serve chilled.
